Curry Chicken


Curry chicken is one of my fav dishes! Best of all it's low in calories and it's packed with super spices with healing properties like turmeric, ginger, garlic and of course curry powder! Here's how…


Curry Chicken Recipe

1  1/4 pounds chicken (any part of the chicken you like)
course salt to taste
ground black pepper to taste
2 tablespoons extra-virgin olive oil
1 tablespoon coconut oil
1 medium onion, thinly sliced
3 garlic cloves, minced
1 tablespoon finely chopped fresh ginger
2 jalapeño peppers, cored, seeded, and finely chopped (less if you don't like spicy)
1 tablespoon curry powder
½ teaspoon turmeric
1 cup chicken broth
Instructions:
1. Clean and pat dry chicken
2. Season chicken with salt and pepper to taste
3. Heat coconut oil and olive oil in pan on medium high
4. Cook chicken on both sides for 3-4 minutes
5. Remove chicken and let it rest
6. Add onions and sauté for about 1 minute
7. Add ginger, garlic, jalapeños and sautee for 1-2 minutes until fragrant
8. Add curry powder and turmeric and stir about 30 seconds
9. Add chicken broth and bring to a boil
10. Return chicken to pan and simmer at least 25 minutes (Optional add carrots)
11. Serve with rice and enjoy!
