How to Agree to Disagree

Hey everyone!  I am just reflecting on this LONG journey Lee and I have been on. If you don't know our background, we are high school sweethearts and have been together for 12 years now. We never took a break although we probably should have. LOL. It has been a rough road because we basically grew up together and taught each other how to be mature adults (with the help of our marriage counsellor), we have reached this level of enlightenment, maturity, and peace so I wanted to share something that has brought us closer with the couples out there...

Strawberry Cheese Cake Stuffed French Toast


Strawberry Cheesecake Stuffed French Toast

8 pieces of bread
2 tbs butter
Powdered Sugar
Egg wash
2 large eggs
1 tsp vanilla extract
2 tbs sugar
1 tbs milk
Filling
1 8oz package cream cheese softened
1/3 cup
1 tsp vanilla extract
5-6 large strawberries diced

Instructions

1. Whisk together egg, 1/2 tsp vanilla, 2 tbs sugar and milk
2. Combine softened cream cheese, 1 tsp vanilla and1/3 c sugar
3. Remove crust  from bread (optional)
4. Spread desired amount of cream cheese in the center of one slice of bread
5. Sprinkle desired amount of strawberries on top of cream cheese
6. Place a slice of bread on top and seal closed by pinching the entire perimeter of the bread carefully
*Prep all of the french toast before dipping them in the egg wash
7. Heat pan on medium high and add 2 tbs butter to melt
8. Dip both sides french toast in egg wash and place in pan
*If you're cooking them all at once dip quickly and place in pan quickly
9. Cook each for about 1-2 minutes on all sides (including edges)
10. Serve and sprinkle with powdered sugar

Zucchini Cakes




Zucchini Cakes 

2 medium zucchini, grated
  • 1 small onion finely diced
  • 2 large eggs, whisked
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese, plus extra to sprinkle on top
  • olive oil
Instructions

  1. 1. Grate 2 medium zucchini and place in a paper towel and blot to remove excess liquid.
  2. 2. Dice onion and blot to remove excess liquid.
  3. 3. Place the grated zucchini and onions in a bowl along with the whisked eggs, garlic salt, onion powder, pepper, breadcrumbs, and parmesan cheese and combine.
  4. 4. Heat 1-2 tbsp of olive oil in a skillet over medium heat.
  5. 5. Drop your desired amount of batter into the skillet and flatten with the back of a spoon to form a cake. Cook for 2 minutes on each side.*
  6. 6. Sprinkle with parmesan cheese on top.
  7. 7. Serve.
