Buffalo Chicken Egg Rolls

Buffalo Chicken Egg Rolls

Egg Roll wrappers
4 boneless skinless chicken breasts
salt, pepper, garlic powder, onion powder
1/2 stick butter
1/4 cup Frank's red hot sauce
1/4 cup Frank's sweet chili sauce
Oil for frying
Blue cheese or ranch dressing for dipping

Instructions

1. Season a large pot of hot water with salt, pepper, garlic powder, and onion powder and stir to dissolve
2. Add chicken breasts and bring to a boil
3. Let it cook down and stir every now and then until there is about 2 inches of water left in the pot
4. Remove chicken from pot and remove any fat
5, Shred chicken and let it cool
6. Melt butter
7. Mix hot sauce and sweet chili sauce with butter
8. Combine shredded chicken and hot sauce mixture
*Add sauce to chicken and be sure not to drench the chicken as this will make your egg rolls soggy and hard to wrap
9. Place egg roll wrapper in a diamond position and add about 1 1/2 to 2 tbs of chicken
10. Roll egg roll wrapper upward and tuck underneath the chicken
11. Fold the sides inward and tuck underneath the chicken
12. Roll the remainder of the egg roll wrapper upward until you reach the triangular tip
13. Dip you finger in water and rub it on the triangular tip to seal the egg roll
14. Heat a pan of oil on medium high
*You'll know it's hot enough by placing a wooden spoon or chop sticks in the oil. When the oil surrounding the wood begins to bubble, the oil is ready
15. Carefully place egg rolls in pan open side down and fry on both sides until golden brown
16. Remove from oil and place them standing upright in a strainer
*Serve with a side of your favorite blue cheese or ranch dressing and celery
