Spinach and Ricotta French Toast Roll Ups

Spinach and Ricotta French Toast Roll Ups
6 slices of bread with crust removed
2 tbs butter
*parsley or oregano for garnish
Filling
1 small onion diced
2 oz baby spinach
ricotta cheese to taste
mozzarella cheese to taste
parmesan cheese to taste
1 tsp garlic salt
1/2 tsp black pepper
1/2 tsp onion powder
1 tbs olive oil
Egg Wash
1 extra large egg
1tbs egg
1 tsp sugar
pinch of garlic salt and pepper to taste (optional)
Instructions
1. Heat pan on medium high and add olive oil
2. Add onions, garlic salt, pepper and onion powder and sauté until translucent
3. Add baby spinach and stir to coat with olive oil and combine into onions
4. cook for 3-4 minutes stirring constantly
5. Remove from heat and allow it to cool enough to handle with your hands
6. While filling cools, remove crust from bread slices
7. Flatten bread slices with rollin pin
8. Spread desired amount of ricotta cheese onto one edge of each slice of bread
9. Add equal amount of spinach and onion mixture to the edge on each slice
10. Add desired amount of mozzarella cheese to the edge of each slice
11. Tuck and roll the filling into each slice of bread
12. Whisk together all egg wash ingredients
13. Heat pan on medium high and add butter to melt
14. While butter melts dip and cover the roll ups with the egg wash
15. cook on all sides for 1-2 minutes each
16. Serve and top with grated parmesan cheese and desired garnish
